Foundational Fermentation
For more than a millennium, miso has been the foundation of Japanese culinary heritage — from a Heian Period delicacy prized enough to serve as currency, to a hearty staple that fueled Kamakura Period samurai warriors. Today, miso is an indispensable part of nearly every traditional Japanese meal, whether as a steaming bowl of miso soup served alongside a spread of side dishes, or as a marinade infusing fresh cuts of meat with rich umami balanced by notes of salt, sweetness, and depth. Miso possesses extraordinary variation, with over 1,300,000 classified varieties in Japan alone, shaped by region, fermentation time, blend, and base ingredient. At this historic Tokyo miso specialty store in Japan — sourcing over 70 unique varieties from across the country — discover the full complexity and delicious diversity of miso. Guided by the third-generation owner and surrounded by the original wooden beams that have witnessed over 90 years of the shop's history, experience the rich world of miso, one of Japan's most essential ingredients.
