The advent of ramen in Japan can be traced to the arrival of overseas cuisine, including Chinese cuisine, in the mid-1800s, when the ports of Japan were officially opened to interaction with the rest of the world. What began as a flavored soup with just noodles gradually developed more flair, with a variety of toppings added to furnish the flavor. During World War II, ramen became a meal for the common people, leading it to become an affordable fast food in the post-war era, a role it still holds in the present times. At this Tokyo ramen restaurant tucked away in a quiet neighborhood, the owner-chef, trained in traditional Japanese cuisine, seeks to create a from-scratch, simple yet delicious soup that all his customers can enjoy, from the young to the old. In addition, the owner pursues the concept of zero waste, following the tradition of ramen shops using what other culinary institutions would consider food waste, to create a delicious soup base. Join the owner-chef and try your hand at creating a ramen soup base from scratch. Then, boil the noodles and prepare the additional flavor elements of the soup. Finally, assemble a fresh bowl of ramen to enjoy the fruits of your labor.
