The Catch of a Lifetime

Nestled within one of the more serene neighborhoods of metropolitan Tokyo, the traditional techniques of Edo-Mae Sushi are executed with the utmost care. Continuing a practice dating back over 125 years, fourth-generation chef Takeshi-san places history and family spirit in every dish he prepares. Edo-Mae sushi requires special, time-honored techniques and attention, those often lost in the bustle of contemporary life. At this family-owned izakaya, every aspect is considered: the fishing grounds, the rice farms, the vinegar, the shape, the knives, the seasons, the guests, and more. Under the tutelage of Takeshi-san, dawn the traditional outfits of Edo period chefs and learn the unique skills required to prepare a full course of Edomaezushi—and what sets this storied sushi style apart from all others.
