What you’ll do

Join the culinary master in the kitchen space and learn about katsuobushi, one of the key ingredients used in dashi making. Then, try your hand at preparing katsuobushi and making your own dashi soup. Finally, enjoy the dashi you made with a selection of dashi-based seasonal dishes prepared by the 9th-generation mercantile culinary master. Tour the main storefront and see the variety of dashi and other ingredients being sold to local and business people alike.

Founding Flavors

Comprised of foundational ingredients from both land and sea, dashi is a traditional Japanese soup stock, dating back to ancient times. Ingredients like kombu seaweed and bonito shavings form the basis of dashi, with recipes including various additions such as vegetables, soy sauce, or miso paste. When the individual components are aged, steeped together, and simmered over heat, an umami-rich stock is produced, one used for soups, sauces, and virtually all Japanese cuisine preparations.
