Simple Taste, Elevated Brews

High-quality rice, pristine water, and koji. Those are the only ingredients necessary to craft Japan's most iconic spirit, sake. With roots tracing all the back to the 3rd century, and formal brewing by the Imperial Court starting in the 7th century, sake has been deeply woven into Japan’s cultural and spiritual fabric since its earliest origins. While the sake industry has since industrialized, sake breweries were once hyper-local, the core of communities, with laborers joining on on winter production during the agricultural off-season. Nestled amongst the mountains of the Nakasendo route, this sake brewery filled with regional charm passionately produces high-quality sake on a small-scale, providing a taste of elegance amidst the rural landscape. Now operated by the 22nd-generation owner, embodying centuries of history, learn more about the complex fermentation process required to craft sake with a private tour of the sake brewery's production facilities led by the toji head brewer, followed by a sampling of the brewery's top selections, for a culinary immersion into Japanese culture.
