What you’ll do
View a video about the history of the sake brewery itself. Then, led by the 13th-generation sake master, tour the sake brewery and learn about the process of sake making. Finally, enjoy a tasting of a variety of sake brewed at the brewery.
Who can attend
Sake tasting is only available to those who are 20 years of age (legal drinking age in Japan) and above.

Polishing It Off
Sake is created from the three standard components of rice, water, and koji mold, which is the key ingredient for fermenting the rice. In the process of making sake, the rice selected to be used is polished to varying degrees to create different flavor maps. The lower the polishing ratio of the rice grains, the higher the percentage of the rice grain's surface is polished, leading to a stronger aroma and clearer flavor of sake. In reverse, if less of the rice grain's surface is polished, the stronger the sake flavor is and the lighter the aroma is. At this Kyoto sake brewery, they specialize in creating sake from Kyoto-grown rice, which is limited to only being used for sake production within the Kyoto area.
