What you’ll do
Don an apron and join the owner-chef behind the counter for a short lecture on dashi making. Then, try you hand at making shinjo, a paste made from a single base ingredient, such as yam or fish. Finally, return to the restaurant in the evening to enjoy a kinari ryori meal.

Gentle Flavors Born from Nature
During the Edo era, there emerged a style of cooking unique to the Osaka area. Stepping away from the flavoring-centric cooking of Kyoto cuisine, or Kyo-ryori, this new style of cooking instead turned to focus on the natural flavors that could be drawn out from each ingredient used. This was the origin of kinari ryori, or kinari cuisine, where flavors endemic to homegrown ingredients took center stage for each dish presented before the diner, for them to enjoy the base flavors without any distractions. At this restaurant tucked away in the streets by the looming Osaka Castle, step behind the counter and immerse yourself in the art of kinari ryori. Under the guidance of the owner-chef, learn about the methods of making dashi. Then, create your own shinjo, a staple of kinari ryori, a paste made from a single base ingredient, such as yam or fish. Finally, return in the evening to experience a meal and taste the depth of the subtle flavors of kinari ryori.
