Shaping Osaka Soul Food
Osaka is affectionately known throughout Japan as the "kitchen of the nation." The merchant city's streets overflow with fried sticks of kushi-katsu, heaping plates of teppan-fired okonomiyaki and yakisoba, and, of course, the ever-iconic round shape of takoyaki. While the culinary history of takoyaki is still quite fresh, developed as a filling, flour-based dish in the difficult post-war years when rice supplies were critically low, it has since developed into a cultural Kansai staple of Japanese cuisine. A savory, ball-shaped snack made of batter, cooked on a griddle, and stuffed with chopped octopus, green onions, and ginger, takoyaki brings full flavor in bite-sized form. In this culinary workshop, geared towards aspiring restauranteurs looking to open their own professional Kansai-style eatery, learn the industry secrets to crafting your own takoyaki. Led by a 2nd-generation culinary instructor with over 40 years of experience and over 7000 graduates who've gone on to open their own Japanese restaurants, you'll spend the day cooking but leave with the knowledge of how to cook takoyaki that'll last a lifetime.
