What you’ll do

Immerse into the art of soba making led by a professional chef. Knead and prepare the dough, shape and fold it on the board, and then cut it into soba noodles. After, relax and enjoy a dinner course featuring your own noodle creations, and those of the master, all paired with sake.

Knead for Speed

A staple of Japanese cuisine with a simple taste that carries immense flavor, soba noodles have been nationally beloved throughout Japan for centuries. While early buckwheat-based prototypes have proliferated in Japan since the 8th century, with later cultivation especially fueled by Buddhist temples, it wasn't until the Edo Period that the iconic form of soba as we know it today was fully developed. A nutrition-packed, quick-to-serve dish that could be served either hot or cold, soba became one of the go-to dishes to feed the ever-increasing number of busy residents working and living within the bustling borders of old Edo Tokyo. Soba has since expanded outwards of Tokyo, with countless regional variations developed, each possessing its own unique flavor. In this soba restaurant, led by a seasoned chef who trained under one of Japan's most famous soba superstars, the Edo culinary tradition has been imported to the horizons of Hokkaido. Under the master's careful guidance, learn how to professionally prepare soba, from mixing the dough to slicing the noodle strands. Then, enjoy a course meal and sake tasting featuring both your own soba noodle creations and those prepared by the master at his central Sapporo soba restaurant.
