What you’ll do
Board the oyster farming boat and head out to the oyster farms suspended out in the bay, off the coast of Kure. Learn about the traditional farming technique, stake-driven farming, being utilized by the oyster farmer, as well as the history and culture of oyster farming in Hiroshima. Observe the farmer at work and then return to port for a tour of the oyster processing workshop. Finally, enjoy a tasting of fresh oysters.

Hanging in There
In the shallow waters off Kure, leading towards the Setouchi Sea, there stand neat grid rows of bamboo stakes planted into the shallow sea floor. And, strung between them, hang strings of scallop shells, platforms for the growth of one of Hiroshima's famous local produce: oysters. A sight different from the usual floating rafts with the oysters hung underneath, submerged in the nutrient-rich waters of the sea, this oyster farm utilizes a traditional technique of oyster farming that focuses more on the nurturing of the rich natural flavors of the oyster over production numbers. Known as the stake-driven farming method, this method was named for grid-like stakes used to suspend the oysters above the water, not completely submerged. This method sought to recreate the environment in which naturally occurring oysters would have experienced, with conditions shifting with the rise and fall of the tides, and the weather above the surface of the ocean changing with the seasons, enriching the oysters themselves and bringing out more of their natural flavors and nutrients. Join a local oyster farmer utilizing this method on his boat and see the farming process firsthand. Learn about the history and culture revolving around Hiroshima's oyster industry. Then, return to port and embark on a tour of the oyster processing workshop. Finally, wrap up the experience with a fresh oyster tasting and immerse your taste buds in one of Hiroshima's representative cuisines.
