Pure, Local Flavor

Soba, a long-standing staple in Japanese cuisine with roots as far back as the Jomon Period (10,000 BCE to 300 BCE), spread in popularity due to its ultra-portable capability. As the merchant class expanded, and cities increased in size, eating out became more common - at all hours of the day. To meet the demand, vendors took to the streets with stalls that could be carried by a single person, dishing out late-night soba to hungry customers. Deceptively simple to make, with flour and water being the core ingredients, quality and precision therefore play a crucial role in developing the taste. Nestled at the base of Niigata's mountain ranges, where melting snow transforms into pristine water flowing through streams and wild mountain vegetables grow abundant, is a soba restaurant that draws in both Niigata locals and culinary-motivated travelers alike. Featured in regional Michelin guides and operated by a 2nd-generation chef, who rebuilt the restaurant inherited by his father after the original location was swept away in a fierce storm, purely local ingredients are utilized. Surrounded by idyllic scenery, the babbling of river water audible from even inside the restaurant, learn how to make soba straight from a professional chef. Then, feast on your soba and a seasonal selection of dishes prepared by the chef for a culinary immersion into Niigata's flavor.
