Landscape of Flavor and Color
One of the precepts of Zen Buddhism states that one should not take the life of another living being. And hence, this is reflected in the traditional vegetarian cuisine of Japanese Zen Buddhist monks, called shojin ryori. Developed in the 13th century along with the spread of Zen Buddhism, it avoids meat, fish, and strong flavors like garlic or onion, focusing instead on seasonal vegetables, tofu, and grains. It balances color, taste, and nutrition, reflecting mindfulness, simplicity, and respect for nature. At a temple located in a quiet corner of Kyoto, dive into the flavors and colors of shojin ryori from a 5th generation shojin ryori chef, after a tour of the temple itself. This chef's family business is delivery based and has been providing shojin ryori meals to temples and homes all around Kyoto for over 150 years. Savour the delicate and delicious flavor landscape of shojin ryori with views of the temple's seasonally changing garden and the dynamically illustrated fusuma (sliding doors) on the second floor of the temple.
