The Traditional Taste of Tokyo Sushi

Thick cuts of fatty tuna, authentic wasabi freshly grated at the counter, an array of the day’s freshest catch displayed behind glass—sushi, one of Japan’s most iconic dishes, offers both simplicity and artistry. Its history stretches from ancient preservation methods to Edo Japan’s beloved fast food, evolving today into a spectrum of dining experiences, from casual bites to refined haute cuisine. Founded in 1905, this restaurant has served sushi to locals for over a century—lunches for the nearby workforce, dinners for families seeking elevated fare. Today, it is led by the fifth-generation head chef, continuing a tradition of meticulous craft and quality, as well as of creating authentic Edo-mae style sushi, which features catch sourced straight from nearby Tokyo Bay, preserved and prepared using a unique variety of methods. A true family affair, the restaurant thrives under the guidance of the head chef and his younger brother, with their mother supporting operations. Join the chef behind the counter to learn the secrets of making sushi from a professional chef, and experience firsthand the precision, rhythm, and care that transform fresh ingredients into edible art.
